Toasted Sandwich Maker - Healthy Cooking For Two
We Love To Eat! Fortunately, I enjoy cooking. Wanting to cook healthy, quick simple meals for only two people, and not wanting another electrical kitchen appliance, an All Clad Panini Press stove top grill was the best choice for us. It has dimensions of 17x11 inches which makes it an ideal size for two 4x5 inch toasted sandwiches. A toasted sandwich maker is non-stick and easy to clean, however, after preheating it helps to baste press and pan with olive oil or spray them with a non-stick spray. They all have instructions but preheating the pan and press on medium (or a little lower) heat has worked the best for most recipes. It is also essential to heat both pan and press on separate burners. Be very careful when picking up the press. Parts of a Panini maker will get quite hot.
Some ideas for a simple toasted sandwich is to use a hearty bread layered with turkey, cheese, tomato, and onion.
Toast in Panini maker until bread is browned. Or use sliced turkey, artichoke hearts, black olives, roasted red bell pepper and provolone cheese on hearty bread. It is important to use a hearty robust bread as regular sandwich slice bread tends to flatten out and almost disappear.
Toasted sandwiches are great for leftover roast beef or ham. Layer a hearty sun-dried tomato ciabatta with left over roast beef, roasted red bell peppers, onions, tomato, slice of cheddar cheese, top with another slice of bread and toast in Panini maker until brown. Or try a double cheese beef panini. Spread a slice of ciabatta bread with mayo and prepared horseradish then layer with crumbled blue cheese, onion, provolone cheese, and roast beef. For ham layer bread with swiss cheese and ham and grill.
With Thanksgiving and Christmas just around the corner a Toasted Sandwich Maker would be great for left over turkey sandwiches. A good healthy turkey toasted sandwich is ciabatta bread layered with turkey, marinated artichoke hearts drained, chopped and patted dry, sun-dried tomato halves drained and chopped, basil leaves, reduced fat provolone cheese and topped with bread. Place in Panini maker and brown.
A Panini maker makes a great stove top grill. The grill press holds a lot of heat and sears the meat on top to keep the meat from drying out. You can easily make in-door grilled hamburgers with this handy little device. It will produce nicely browned patties on top and bottom without turning the patties. If you want the smoky flavor mix in 2-3 teaspoons of liquid smoke to hamburger before making into patties. For a different flavor mix a tablespoon of Worcestershire sauce and chopped onion into hamburger before making the patties.
The best thing about toasted sandwiches is experimenting and using any of your favorite sandwich toppings. This is especially nice if you both have different tastes.

About Artisan Bread - The Basics
Artisan Breads are created by a skilled craftsperson with the knowledge and understanding of how to properly blend, ferment, form and bake traditional loaves of bread. Low Carb Bread Recipes
It has been noted that usually bread is kept out of the low carb diet, if you wish to add a low carb bread recipe to your low carb recipe book then there are some terrific options for you. There's a variety of range for you in the low carb bread recipes too, you can have muffins, bagels, sticky buns and pancakes too! Well, there are some great bread recipes that you can put on your low carb diet recipe list but make sure you choose the right ones. One of the favorite recipes for the bread lovers is the apple sauce muffins; it is an easy low carb recipe. It is the favorite recipe for those who had to cut almost all of the bread products out of their life.
Although this recipe does require many ingredients but still it is simple and easy to make.
The dry ingredients portion that you'll be needing for this easy low carb recipe are:
3/4 cup soy protein isolate
1/4 cup oat flour
1/4 cup wheat gluten flour
1/4 cup ground golden flax seed
1 teaspoon baking powder
2 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/4 teaspoon mace or ginger
1/4 teaspoon salt
1 cup Splenda and
1/4 cup brown sugar twin
Now for the wet ingredients in this low carb recipe you'll need:
4 beaten eggs
1 teaspoon vanilla
3/4 cup light olive oil
1 cup unsweetened apple sauce and
2-3 drops apple oil
It is not necessary to make the topping, but to make it look more beautiful you can make the topping, for the topping you'll be needing:
1 tablespoon of rolled oats
1 tablespoon oat flour
1 teaspoon brown sugar Twin and
a couple shakes of cinnamon
For the preparation of this low carb recipe all you'll have to do is mix the dry ingredients together and the wet ones together in two separate bowls. Then mix the wet ingredients into the dry ones until blended pour it into the sprayed muffin tins, sprinkle the topping that is if you made one and put it in the oven to bake. Now you have to bake the muffins at 350ºF for half an hour or even longer if your desire.
If you want to change the recipe to pumpkin spice muffins all you have to do is add 15 oz. canned pumpkin instead of the apple sauce and apple oil.
Another very easy low carb recipe that you might want to know and try is the cheddar cheese bread. For the cheddar cheese break you need:
1/3 cup soy flour
1/3 cup soy protein
2 large eggs
1/2 teaspoon baking powder
2 tablespoons of sour cream
2 tablespoons of olive oil
1/2 cup cheddar cheese grated and 2 teaspoons oregano.
For the preparation of cheddar cheese bread, have the oven preheated to 375ºF, mix the soy flour, soy protein, eggs, baking powder, sour cream and oil in a bowl. Fold in half of the cheddar cheese, pour the batter into the pan and sprinkle the remaining cheddar cheese on top of it and the bake for about 30 minutes.

*EDIT* Here's my new roaster: www.youtube.com For Coffee enthusiasts, here is one method for roasting coffee at home. "Used" breadmakers are regular guests of thrift stores, and since very few people use it more than once, they are usually like new. You can pick up a heatgun for as little as $10 (if you don't have one in the garage already). I did modify the breadmaker so that the paddle spins continuously. Most breadmakers have a knead setting that will work, too. (In the video I say that "the heatgun is too close to the heat" while I meant to say "the heatgun is too close to the beans".) I've recently been informed that opening the lid and/or shutting off the heat may stall the progress of the roast. Roasting coffee beans is like a chemical experiment. Interrupting the chemical process inside the bean by shocking it's temperature even for short periods will result in a less than optimum roast. Keep this in mind.

Machines Make Dough for Bread and Rolls
Bread makers, bread machines, stand mixers and food processors will all mix ingredients into dough for you. Just add the water or liquid ingredients and flour and start the mixing paddles. When using a mixer or food processor you'll have to be a little practiced in knowing when the dough has been mixed enough. When the dough holds together and seems to be one uniform mass, stop the mixer and remove the dough.
Bread machines do a little better job because they typically have a 'dough cycle' where the dough ingredients are thoroughly mixed. The bread machine provides a warm atmosphere so the dough can be taken through its first rising.
Once your bread machine makes the dough, tip over the pan so the dough falls out onto a lighted floured surface. Remove the mixing paddle(s) from the dough and punch out the gas that has collected during the dough rising. Turn the mass of dough over and press out the remaining gas.
To make bread loaves, divide the dough into two balls and cover with a damp cloth. Let the dough rest for 20 minutes. Make each dough ball into a loaf by rolling and shaping into a cylindrical form. Put both loaves on a floured baking sheet or stone. Let rest for 45 minutes. Spray loaf tops with water, or brush with beaten egg, and top with sesame or poppy seeds. Bake at 400 degrees for 25-35 minutes.
Alternatively, you can fill a baking pan with the dough instead of making a loaf. Here's where you can be as innovative as you like. Use a large tin can or coffee can as the bread pan. Even a ceramic flowerpot can be used as the bread pan. Just make sure to use one that hasn't been contaminated with any garden chemicals.
Make dinner rolls simply by dividing the dough into a dozen balls instead of two as it comes out of the bread maker. After letting the dough rest for half an hour, take each ball and divide it into three even pieces. Roll each piece between your hands and shape into a small ball and place the three balls together in a muffin cup or stick them together on a baking pan. Spray lightly with water and let rise for 30-45 minutes. Bake at 350 degrees until golden brown, about 12 minutes. Brushing the dinner roll tops with beaten egg before baking will give them a nice golden color.

An Easy DIY Repair For Squeaky Juicers, Bread Makers, and Mixers
If you have squeaking or rattling kitchen appliance you know how annoying this can be. With cheaper devices this is usually the time to retire them and replace with something newer, but in some cases the appliances still feel quite solid and were expensive. Luckily there is an easy fix for many devices, and this is simply lubricating certain parts that are a bit worn and therefore are making more noise than they used to.
Juicers, food processors, and bread makers are all common culprits for making loud squeaks and extra noise after a few years. The manufacturer usually lubricates gears, pulleys, axles and bushes with either silicone or teflon based materials. These do last a long time, and if you can find them they are the best thing to use again. You can get them from electrical repair shops or try hobby shops. The thing about these lubes is that they are very clean and don't leave ugly stains, thats why hobby makers like to use them. To lubricate the noisy parts you will have to open the appliance case. Turn it off and unplug it, then look for the screws that let you lift off the top, side, or bottom plate - there should be about 4-6 holding it down. Most electrical appliances use phillips head screws, although some use security screws you will need special bits for. Once inside and when you an see the motor, pulleys, and gears, just give the machine a turn by hand. You should hear the familiar squeak, and see where it comes from. All you need to do is apply a few drops of the lubricant between the contact points (eg where an axle runs through a bush or bearing) and run a thin bead around gear wheels. The only place NOT to put any is on a pulley that has a belt running over it, as bread makers often do. There has to be certain amount of friction here so the belt does not just slip. If this does occur you need to clean the lube back off using a cloth and denatured alcohol.
